 Who doesn’t like well-aged cheese? 

Tom Badcock’s tour begins with cheese from neolithic times where the earliest cheese was made by tribesmen in the Zagros Mountains using goat’s milk.  His talk will unravel the history of cheese in a timeline all the way to the blue cheeses of the 17th century, while the cheeses you will be sampling will illustrate today’s examples of these historic cheeses and the cheese-making techniques that Tom will be talking about. 

Tom, who has spent 30 years of his life with Cheese, is one of the country’s leading experts and has advised many of the finest Restaurants in the country on their cheese menus.  (He is also responsible for the cheese the Savile Club is now enjoying.)

n.b. Neolithic goat’s cheese will not be on your tasting plates.  It’s just a little bit past its best!
